Brewing In The Distillery District

A history of Ethereal Brewing and Pepper Distillery

This 25-acre property was home to the historic James E. Pepper Distillery, which began making bourbon in 1879. However, in 1958 the site was abandoned completely, untouched for nearly 50 years. Ethereal Brewing was the second business to open in spite of the clear neglect of the existing structures and the moonscape like parking lot.

Ethereal Brewing’s place on the property begins with Andrew Bishop traveling to Northwood IA to visit family where he found his uncle brewing beer in a small brewery and taproom called Worth Brewing. Andrew saw this as his future, owning and operating a Craft Brewery. He soon found a partner in beer, Brandon Floan, who was captivated by the science of the production of craft beer.

Since then, this revitalized piece of Lexington history has become a lively downtown destination. Along with Ethereal Brewing, you’ll find a cidery, a craft ice cream store, a coffee shop and multiple options for food and drink at one of Lexington’s most exciting hotspots.

Our Craft Beers

  • Omerta - Italian Pilsner
    5.2% ABV

    Crisp and refreshing, this style emphasizes light biscuity malt and spicy floral hops

  • Lambda - Oatmeal Stout
    5.7% ABV

    Very drinkable with the upfront coffee and roast character balanced by sweet molasses notes.

  • Throwback - Classic American Pilsner
    4.8% ABV

    This IS your dad’s beer – A classic pilsner that is light, crisp, and goes down super easy!

  • White Ale - Farmhouse Witbier
    5% ABV

    Our lightest offering, brewed with 10lbs of fresh fruit zest (sweet oranges, lemons) and Indian coriander seed. Very light with a fluffy mouthfeel and dry finish.

  • Hop-Shaka-Laka - Imperial IPA
    8.2% ABV

    Jam packed with tropical and resiny hop goodness. Brewed with over 5lb/bbl of Citra and Simcoe

  • Muffin Man - Blueberry Muffin Sour
    6.5% ABV

    Jammed packed with blueberry and muffin goodness! The beer starts out fruity and sweet, and finishes with a cleansing acidity, just begging for the next sip.

  • Maibock - Golden Lager
    7.5% ABV

    Malty and bready with a rounded caramel note, this beer drinks full up front but finishes dry and quenching.

  • Samoa Baba Yaga - Russian Imperial Stout
    14% ABV

    Our reserved Russian Imperial Stout aged in Four Roses barrels, with Samoa. Ambiguous as its namesake, Baba Yaga is bittersweet and rich, with a delightfully chocolatey and boozy flavor.

  • Whipped - Coconut Cream Pie Sour
    6.5% ABV

    A pi day special! Our sour base with raw and toasted coconut with marshmallow

  • Mourning Sun - Black IPA
    7% ABV

    A collaboration with Mirror Twin Brewing, this black IPA is a touch roasty and pleasantly hoppy with a dry finish

  • Salted Caramel Lambda - Oatmeal Stout
    5% ABV

    We took our flagship oatmeal stout, Lambda, and let it sit on the delicious treat, salted caramel, for a delightful variation

  • Cloud Candy - Oat Cream IPA
    6.5% ABV

    This IPA is creamy from lactose and hazy from oats. Mosaic hops were used.

  • Lemon Meringue-utan - Lemon Pie Sour
    6.5% ABV

    A pi day special! Our sour base with Sicilian lemon and vanilla beans

  • Mighty Monarch - Irish Red Ale
    6.8% ABV

    Malty and subtly sweet upfront with a rounded and bready finish. Initially debuting during our bartender brew day, this was Darien’s brew choice. Perfect now for Saint Patrick’s Day!

  • Did it for the Graham - Pastry Stout
    9.9% ABV

    Pastry stout with vanilla, cinnamon, honey, and graham cracker. A collaboration with West Sixth Brewing

  • Fad-Tastic - N.E. IPA
    6.9% ABV

    This is a New England style IPA, meaning high on the hop flavor, low on the bitterness, and hazy as all get out!
