Brewing In The Distillery District
A history of Ethereal Brewing and Pepper Distillery
This 25-acre property was home to the historic James E. Pepper Distillery, which began making bourbon in 1879. However, in 1958 the site was abandoned completely, untouched for nearly 50 years. Ethereal Brewing was the second business to open in spite of the clear neglect of the existing structures and the moonscape like parking lot.
Ethereal Brewing’s place on the property begins with Andrew Bishop traveling to Northwood IA to visit family where he found his uncle brewing beer in a small brewery and taproom called Worth Brewing. Andrew saw this as his future, owning and operating a Craft Brewery. He soon found a partner in beer, Brandon Floan, who was captivated by the science of the production of craft beer.
Since then, this revitalized piece of Lexington history has become a lively downtown destination. Along with Ethereal Brewing, you’ll find a cidery, a craft ice cream store, a coffee shop and multiple options for food and drink at one of Lexington’s most exciting hotspots.

- Muffin Man - Blueberry Muffin Sour
6.5% ABV
This was a small batch beer, turned flagship because regulars insisted so. And for good reason.. Try the Blueberry Muffin in a glass that’s sweeping Lexington
- Lamdba - Oatmeal Stout
5.7% ABV
Very drinkable with an upfront coffee and roast character balanced by sweet molasses notes
- Throwback - Classic American Pilsner
4.8% ABV
This IS your dad’s beer – A classic pilsner that is light, crisp, and goes down super easy!
- Weiz Guy - Hefeweizen
5.5% ABV
Traditional German wheat ale – cloves accompany bananas with a nice rounded finish. Lots of flavor, yet very crushable
- Happy Tails Vol. II - Amber Ale5.3% ABV
Pleasantly malty and smooth. Brewed in honor of our lost pets over the last two years
- Old Gregg - Brown Porter
5.9% ABV
Brewed with English malts, this dark ale has a toasty flavor with bread and malty notes.
- Decatron Vol 2 - Triple Hazy IPA
10% ABV
Triple hazy IPA brewed with Citra, Citra Cryo, and Galaxy hops.
- White Ale - Farmhouse Witbier
5% ABV
Our lightest offering, brewed with 10lbs of fresh fruit zest (sweet oranges, lemons) and Indian coriander seed. Very light with a fluffy mouthfeel and dry finish.
- Baba Yaga - Four Roses BBA Imperial Stout
14.3% ABV
Our imperial stout aged in Four Roses barrels. Ambiguous as its namesake, Baba Yaga is bittersweet and rich with a delightfully chocolatey and boozy flavor.
- S’mores Baba Yaga - BBA Imperial Stout

We turned this barrel aged beauty into an ooey-gooey treat with our homage to a favorite campfire treat! Out of barrels and onto goops of marshmallow fluff, Ghanaian cocoa nibs, and a touch of cinnamon.
- Anomoly - Saison
6.5% ABV
A traditional Belgian style saison with fruity, floral notes with a peppery dry finish
- Zongo - American Pale Ale
5.5% ABV
A crisp and aromatic American Pale ale featuring Simcoe and Meridian hops. Dry with a balanced hoppy finish.
- Shadowlands - BBA Black Barleywine
10.5% ABV
This BBA Black IPA is Malty, chocolatey, and it finishes with robust hop flavor
- Crocodile Clocktower - Australian Oat Wine
12.3% ABV
This barrel-aged Oat IPA is sure to pack a punch while maintaining its smoothness. An easy drinking twelve percenter
- Wanderland - West Coast IPA
7.2% ABV
Fiercely hopped, with 31b/bbi of Northwestern hops, minimum malt, and a dry finish. Flavors include grapefruit pith, pineapple, and citrus
- Lord Grod - Polish Smoked Lager
4.4% ABV
We teamed up with our friends at Monnik and Atrium to make this easy drinker with a twist. This malty lager features barley dried over flame to impart a smoky finish.
