A history of Ethereal Brewing and Pepper Distillery
This 25-acre property was home to the historic James E. Pepper Distillery, which began making bourbon in 1879. However, in 1958 the site was abandoned completely, untouched for nearly 50 years. Ethereal Brewing was the second business to open in spite of the clear neglect of the existing structures and the moonscape like parking lot.
Ethereal Brewing’s place on the property begins with Andrew Bishop traveling to Northwood IA to visit family where he found his uncle brewing beer in a small brewery and taproom called Worth Brewing. Andrew saw this as his future, owning and operating a Craft Brewery. He soon found a partner in beer, Brandon Floan, who was captivated by the science of the production of craft beer.
Since then, this revitalized piece of Lexington history has become a lively downtown destination. Along with Ethereal Brewing, you’ll find a cidery, a craft ice cream store, a coffee shop and multiple options for food and drink at one of Lexington’s most exciting hotspots.

Our lightest offering, brewed with 10lbs of fresh fruit zest (sweet oranges, lemons) and Indian coriander seed. Very light with a fluffy mouthfeel and dry finish.
Jam packed with tropical and resiny hop goodness. Brewed with over 5lb/bbl of Citra and Simcoe
Jammed packed with blueberry and muffin goodness! The beer starts out fruity and sweet, and finishes with a cleansing acidity, just begging for the next sip.
Malty and bready with a rounded caramel note, this beer drinks full up front but finishes dry and quenching.
Our reserved Russian Imperial Stout aged in Four Roses barrels, with Samoa. Ambiguous as its namesake, Baba Yaga is bittersweet and rich, with a delightfully chocolatey and boozy flavor.
A pi day special! Our sour base with raw and toasted coconut with marshmallow
A collaboration with Mirror Twin Brewing, this black IPA is a touch roasty and pleasantly hoppy with a dry finish
We took our flagship oatmeal stout, Lambda, and let it sit on the delicious treat, salted caramel, for a delightful variation
This IPA is creamy from lactose and hazy from oats. Mosaic hops were used.
A pi day special! Our sour base with Sicilian lemon and vanilla beans
